Kingfish Curry

Hey there, Lounger! When my hubby and I go grocery shopping, we always look for kingfish. Especially if there is a sale, we will undoubtedly buy kingfish steak or some quality cuts near the tailbone portion. The tailbone cuts resemble mini kingfish steaks.

The king mackerel or kingfish is a fish that may have a poor reputation because of its high levels of mercury, but it can actually be quite delicious! Kingfish is high in omega-3 fatty acids despite its low total fat content. It also contains protein, vitamin B12, and selenium. Therefore, we include it in our monthly meal planner.

Coconut milk and curry go well together. Today, I’m super thrilled to share my recipe for a quick kingfish curry with coconut milk and vegetables. It’s flavourful and absolutely creamy goodness!

Here’s What You Need:

For the Kingfish Marinate

  • Kingfish up to 4-5 cuts
  • Plain Yogurt 200ml
  • Cumin powder 1 teaspoon
  • Coriander powder 1 teaspoon
  • Garlic powder 1 teaspoon
  • Onion powder 1 teaspoon
  • Paprika powder 1 teaspoon 
  • Salt and Pepper to taste

For the Sauce and Veggies

  • Coconut Milk 200ml
  • Potato 1 cut into cubes
  • Carrot 1 cut
  • Tomato 1 diced
  • Red onion 1 diced
  • Garlic cloves 2 minced
  • Half Red capsicum cut into cubes
  • Extra Virgin Olive oil 2 tablespoons 
  • Fenugreek seeds 1 teaspoon
  • Oyster Sauce 1 tablespoon
  • A bit of water (optional)
  • Fresh Curry leaves 6 pieces
  • Fresh Coriander leaves for garnish

Time to Cook our Kingfish Curry!

  1. Toast your Kingfish cuts in a marinating bowl with the yogurt, cumin, coriander, onion, garlic, and paprika powder. Season with salt and pepper to taste. Marinate the Kingfish in the marinade for about 15-20 minutes.
  1. Cook the Kingfish in a pan with a bit of extra virgin olive oil after marinating it. Sear the Kingfish until it is a beautiful brownish color, then set it aside.
  1. Pour about 2 tablespoons extra virgin olive oil into a saucepan and heat it up. Add in your diced onion and allow them to caramelize slightly. Toast in the fenugreek seed and minced garlic after that. Cook until aromatic, stirring occasionally.
  1. Continue to cook, add in the tomato, potato, carrot, red capsicum, and fresh curry leaves. Allow them to cook beautifully and tender for a few minutes. Stir in the remaining marinated sauce, coconut milk and a bit of water as needed. Allow for 3 minutes of cooking time.
  1. Season with Oyster sauce, and add your seared Kingfish to the curry. Allow cooking for at least 5 more minutes. After that, toast in your coriander leaves for garnish, turn off the heat and let it rest for about 3 minutes before serving. Serve it with fried basmati rice!

Quick Tips!

  • You can also use Tilapia fish as an alternative for Kingfish.
  • If you enjoy spicy food, you can add chili powder or chili flakes.
  • When cooking, use medium to low heat and adjust as needed.
