Tasty Russian Meatballs Soup

Hey, Lounger! A YouTube video has inspired me to cook my very own tasty Russian Meatballs Soup. I haven’t tasted any Russian food as far as I can remember, and I was curious about it. It looks delicious, comforting, and healthy! Beef is high-protein meat and high in minerals, including iron, calcium, copper, magnesium, and zinc.

So, I watched the video millions of times and cooked my very own Russian Meatball soup! I’m excited to share this with you!

Here’s how you cook a Tasty Russian Meatballs Soup!

Let us dig into the recipe, shall we? It’s a 30 Minutes Prep-Cooking & Good for 3-4 Servings.

Here’s what you need:

  • 250 grams of Ground Lean Beef
  • Five tablespoons Bread crumbs
  • Two Red Onions
  • Five cloves of Garlic
  • One egg 🥚
  • One stalk of Celery
  • One Carrot
  • One Potato
  • Bunch of Parsley
  • Bunch of Onion Chives
  • 3 Bay leaves
  • Olive oil
  • Up to 800 ml of Water
  • Two tablespoons of White Rice
  • Chicken-based soup cube
  • Salt & Pepper

Time to Cook our Tasty Russian Meatballs Soup!

  1. Firstly, we need to make meatballs. Blend one onion, cloves of garlic, a little bit of water, and celery using a hand blender.
  1. Into a mixing bowl, combine and mix well the beef, blended paste, bread crumbs, and egg. After, season it with a pinch of salt and pepper.
  1. Once everything has been mixed well and combined, start making the meatballs. Small sizes, which you can make up to 14 pcs. 
  1. Using low-medium heat, into a pan, add olive oil. We would want to sear the meatballs and set them aside. 
  1. Next, in the same pan, sautee onion and then carrots. For about a minute or two, you can add the minced parsley and onion chives. Mix well. 
  1. Add water, and a chicken-based soup cube, and let it boil. 
  1. Once boiling, add the Rice and Potato cubes. Let them cook. 
  1. Next, we shall add the meatballs, and bay leaves and season them with salt and pepper. 
  1. Occasionally, mix the soup while boiling and simmering to cook it thoroughly. 
  1. You can then rest it for 5 minutes and serve it plain hot or with bread or a cup of rice on the side.

Quick Tips:

  • An alternative to parsley is dill.
  • Choose lean ground meat for lesser fat content.
  • You may also add butter to this recipe if you want it creamier.
  • You may also use White and Yellow Onions. However, I like red onions because they are naturally sweet and tastier.
  • You may use Basmati rice too!
